Aromatic profile

A powerful, concentrated and complex aroma: pronounced spicy and woody notes, with characteristic fruity touches. Its reduced moisture content makes it an excellent base for artisan and industrial extraction.

Frequently asked questions

Can red vanilla be used directly in pastry?
It can be used as an infusion in hot milk or cream, but its texture, less supple than Gourmet grade, makes it less suited to direct scraping. It is optimal for extraction.
