The Madagascar wild pepper (Voatsiperifery, Piper borbonense) is one of the rarest and most sought-after peppers in the world. Hand-harvested in the primary forests of Madagascar, this wild climbing vine develops aromas of unmatched complexity, unlike any cultivated pepper.
Aromatic profile
A three-stage aromatic profile: bright notes of red berries and citrus on the attack; a moderate peppery warmth with resinous, woody notes at the core; a long, fresh, minty finish. Moderately hot — meant to be savoured, not endured.
Recommended uses
Use as a finishing touch, never in long cooking, to preserve its volatile aromas. Crush a few berries in a mortar over steamed fish, a scallop carpaccio, a burrata, or scatter whole berries over a fine cheese board. A little goes a long way.
